Wild Rice & Pepper Salad


I simply love this salad!

Super easy to make and as Lucy Ricardo would say, 
"It's so tasty too! Taste just like candy."

Okay, well it doesn't taste like candy, but it's worth making.


Here's what you'll need:


1 6 ounce Pkg Long Grain & Wild Rice
(I use Uncle Bens)
1/2 Cup Miracle Whip Salad Dressing
2 Tablespoon Olive Oil
1/2 teaspoon Black Pepper
1/4 Teaspoon Grated Lemon Peel
Juice of half the lemon
1/2 - 1 Cup Red Bell Pepper, chopped
1/2 - 1 Cup Yellow Bell Pepper, chopped
1/4 Cup Green Onion Pieces, cut into 1/4 pieces


Prepare the long grain rice as directed on the package, omitting the butter; cool the rice.

In a medium bowl combine the salad dressing, olive oil, black pepper, lemon peel and the lemon juice.

Add the cooled rice to the dressing and toss to coat.
Add the remaining ingredients; mix lightly.

You can serve this at room temperate, but I like to serve it chilled after it has had a chance to marinate in the dressing.


Changing this salad up with pineapple, oranges and nuts would be a great variation of this recipe.
